Vedrenne Supercassis
Vedrenne’s traditional, 100+ year old Burgundian creme de cassis recipe for Supercassis starts by sourcing blackcurrants from three cooperatives that Vedrenne partners with. The majority of the berries are of the famous Noir de Bourgogne variety, the most aromatic in the world. Selected with extreme care in the fields, the berries are sent directly to the production facility in Nuits-Saint-Georges after harvest.
The process of production respects the fruit and takes into account its fragility, with the fruit macerating in alcohol within rotating stainless steel vats, away from air and light. Next, the berries are pressed and the liquid is sweetened.
There is nearly no water added to Supercassis, as the initial pressing of blackcurrants yields a significant amount of liquid with an incredibly rich, robust flavor profile. Made up of just blackcurrants, neutral alcohol, sugar, and water, Supercassis is a pure expression of Burgundy’s famous blackcurrants bottled at 20% abv.
